Salt Cod "Pil Pil" (Bacalao al Pil Pil)

10 minutes with 24-48 hours pre-soaking of cod
20 minutes.
2 persons.

Ingredients:
-    500g salt cod fillets, desalted with skin on
-    250ml extra virgin olive oil
-    3 garlic cloves, thinly sliced
-    2 dried chillies (or to taste)

-    First, be sure to desalt your cod thoroughly.  Rinse it under running water, then place it, fully immersed, in a bowl of fresh water.  Cover and place in the fridge.  Strain and change the water every eight hours – for thin cuts, do this for 24 hours, for thicker cuts, do it for 48 hours.  Failure to go through this process will result in a dish that is too salty!
-    When the cod is properly desalted, infuse the oil.  Heat the olive oil in a pan over a medium heat.  Add the sliced garlic and chillies.  Fry until golden and fragrant.  Remove from the heat.
-    When cooled enough but still very warm, strain the oil through a sieve into a pan, and retain the garlic and chillies separately.
-    Add the cod, skin-side down, to the oil.  Cook gently over a low heat, carefully swirling the pan to release the gelatine from the cod.  It is this gelatine which will emulsify with the oil to form the silky sauce, turning a pale, creamy colour
-    After 5-7 minutes, the cod should be cooked. Remove it from the oil and set it aside.  If the sauce has not emulsified sufficiently, use a whisk to stir it vigorously, taking care not to splash the hot oil.  Don’t whisk for too long, though, or the sauce could become too thick.
-    Once you’re happy the sauce is sufficiently emulsified, return the cod to the sauce to warm through.  Add back the fried chillies and garlic and serve immediately with fresh crusty bread to mop up that delicious sauce!
