More than 40 years ago a tradition was born
More than forty years ago, a Manchega tradition was born from the hand of Julian Sanabria. His father taught him the origins of livestock, thus taking over in the sector. Years later, he would change his journey, to dedicate himself entirely to the elaboration of cheeses.
The company began by making small productions that it marketed around the village, which today has become large exports internationally.
Pure sheep manchega breed innovation, tradition and quality In Quesos Sanabria we have been making cheese of very high quality for more than four decades. To achieve a product with a Manchego designation of origin, we select milk exclusively of pure manchega sheep. Milk is extracted from sheep's udders manually or mechanically and previously filtered, deposited in cooling tanks to lower its temperature to 4 oC. The characteristics of milk intended for the production of manchego cheese are strictly followed by the Regulatory Council of the D.O.
